- 1 tbsp olive oil
- 1 large onion chopped
- 4 garlic cloves minced
- Optional: lemon juice red chili flakes, fresh herbs
- 1 lb carrots peeled and chopped
- 4 celery stalks chopped
- 1 tbsp fresh thyme or 1 tsp dried thyme
- 1 tsp cumin
- 5 cups vegetable broth
- Salt & pepper as needed
Sauté the Onion & Garlic to Soften
Start by heating a little olive oil in a large pot. Add chopped onion and sauté for about 5 minutes until softened. Then add minced garlic and cook for 1 more minute, letting it release its aroma.
Add the Veggies
Add the chopped carrots and celery to the pot. Cook for 5 to 7 minutes until slightly tender. Then stir in the cumin and thyme.
Add Broth & Simmer
Pour in the vegetable broth. Bring everything to a boil, then reduce the heat and let it simmer gently for 25–30 minutes until the vegetables are soft.
Blend Until Smooth
Use an immersion blender or regular blender to blend the soup until creamy and smooth. Take your time to get a velvety texture.
Season & Serve
